Sorry, y’all, but I’m not sure what else to call this yummy concoction. It doesn’t really have a name. But I promise it’s delicious.

Here’s the story.

I was recently put on a minimal-gluten-and-dairy diet for a while, so I was continually on the lookout for good recipes that fit this diet. My husband and I were on an airplane flying home from California, and, just for entertainment and passing the time, I started glancing through the menu of meals to purchase.

That’s where I spotted it: a picture of a yummy-looking breakfast meal, consisting of a mixture of sausage, potatoes, scrambled eggs, and apples. My first thought: That looks delicious. Second thought: I can eat that! And third: It totally could be dinner not breakfast.

So when we got home, I bought the necessary ingredients and set out experimenting. You know what? We loved it! Hubby gave me the ultimate seal of approval: “Let’s have this again sometime.”  🙂

Here’s how to make it.

This recipe can be a little tricky because you have four primary ingredients to prepare at the same time, before mixing them all together. It just takes some focus!

Your first ingredient is the potatoes. Peel your potatoes, if desired, and chop into small chunks. Toss the potatoes with olive oil and herbs, then bake for about 30 minutes or until soft.

Next, do the same with the apples — peel if desired, and cut into small pieces. Add to a skillet with a little butter, and
saute until tender.

 

 

 

 

Cook the sausages by boiling them in a shallow pan of water for about 15 minutes. Much like a hot dog, they are done when they crack open at the ends.

You can easily let these sit, covered, staying warm until the rest of the ingredients are ready.

We decided to try it with chicken & apple sausage, which is one of our favorites!

The last thing is to scramble the eggs. You can do this however you like! I just added a little water (for extra fluffiness), salt, and pepper to mine.

 

 

 

 

Finally, when everything is done, mix it all together! Mix all ingredients in a glass dish and warm in the oven, just for a few minutes to be sure everything is hot. Serve and enjoy!

RECIPE

3 bratwursts (we like Aidell’s Chicken & Apple)
4 potatoes
1-2 apples
4 eggs
Olive oil
Salt & pepper to taste
Italian herbs
Butter

Wash and peel potatoes; cut into small chunks (the smaller the chunks, the faster they will cook). Toss potatoes with oil and seasonings. Bake at 400* for about 30 minutes or until soft, stirring occasionally. Cut apples into small pieces, and saute in butter until soft. Cook brats by boiling in a shallow pan of water for 15 minutes or until done. Scramble eggs with salt and pepper to taste. Mix all ingredients together in an oven-safe dish, and warm for a few minutes. Serves 2.
